Pasta aglio olio
From Lochlan's flatmate in Italy, Alessandro
Method
-
Peel the garlic and crush lightly.
-
Cover the bottom of a larger saucepan with olive oil. Let the oil heat until it is moving and then put in the garlic and the chili. Swish around so that the garlic is coated and take off the heat. The garlic should not brown.
-
Boil the pasta in salted water until there is around 2 minutes of cooking remaining.
-
Ladle pasta water into the oil; 1 and a half seems to be a good amount. Enough so that the pasta will continue to cook.
-
Stir the pasta as it cooks, coating the strands of pasta. When the pasta are cooked, plate them immediately. Season as desired - pepper and some cheese is nice. Eat the garlic if you want or discard it.
