Kale salad pita bread

Salad

  • 1 × bunch kale
  • 2 × carrots
  • 1⁄2 cucumber
  • Dried cranberries
  • Goat’s cheese
  • Pumpkin seeds
  • 3 × falafel
  • 1 × pita bread
  • Hummus

Dressing

  • 2 tablespoon pple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon whole mustard
  • 80mL olive oil
  • Salt

Method

  1. Heat oven to 200°C. Heat falafel and pita for 20 minutes, flipping the pita after 10 minutes.
  2. Dry roast pumpkin seeds and set aside to cool.
  3. Tear and massage kale until moist.
  4. Deseed cucumber and cut it and carrot into small pieces.
  5. Add these together as well as cranberries, goats cheese.
  6. To make dressing, add all parts of dressing. Stir well and pour.
  7. When pita and falafel are cooked, fill the pita with falafel, hummus, and salad.
