French onion potato bake

From Jason

Method

  1. Preheat the oven to 180°C. Lightly grease a large baking dish, approximately 2.5 litres in capacity.

  2. Put the thickened cream, milk, and French onion soup mix into a jug. Whisk until well combined.

  3. Arrange approximately one-quarter of the sliced potatoes in the baking dish. Drizzle over some of the cream mixture.

  4. Continue layering the potatoes and cream mixture until everything has been used, finishing with the remaining cream mixture.

  5. Cover the baking dish tightly with foil. Bake for approximately 1 hour, or until the potatoes are tender when tested with a knife.

  6. Remove the foil and sprinkle the grated cheese evenly over the top. Return to the oven, uncovered, for approximately 15 minutes, or until the cheese is melted, golden, and bubbling.

  7. Remove from the oven and allow the bake to stand for at least 10 minutes before serving — this lets it set and makes it easier to cut and serve.

  8. Sprinkle with fresh thyme before serving.
